30 Minute Seafood Soup, with Two Options!

Hi everyone! Wow, I am so sorry that I slightly abandoned the ship for the last few months! Trust me, it wasn't intentional.


Before I start on this recipe, the quick explanation for the big gap in recipe posting is that our sweetie pie, Birdie, had two CCL (cranial cruciate ligament) tears that developed in May. Fortunately, both her surgeries were a success! She is back to her crazy, goofy self, and we couldn't be happier. We learned a lot of lessons from the recovery process that we will carry with us when we add to our furry family.

Through all of that, I am still creating budget meals and utilizing foods from the fridge and freezer. So, I have many delicious meals to share!


So here is a tasty seafood soup with a vegan option to help you stay cozy and healthy these next winter months.

30 Minute Seafood Soup:

Time: 30 minutes Servings: 4 Cost per serving


Meat:$4.49* Vegan: $4.46*


Ingredients:

One bunch of celery sticks, sliced

20 mini nugget potatoes, quartered (see below for keto options)

Two tbsp of miso paste

1/2 tsp Prairie Naturals Fermented Turmeric powder

6 cups of water

Half of a large red onion diced

42g bag of Canadian Kelp Kombu

One pint of cherry tomatoes, halved

1/4 tsp of ground black pepper

For vegan option: 227g pack of Ponderosa Oyster mushrooms, sliced

For meat base option: 300g bag of Western Family seafood mix (frozen)


Instructions:

  1. In a large pot, place it on medium heat. Make the soup base by combining water, miso paste, turmeric powder, potatoes, onion, kombu, and ground black pepper.

  2. In a separate pan, cook your vegan or meat base. For the vegan option, you may want to add some oil (of choice) to the pan to help soften the oyster mushrooms.

  3. Once your vegan or meat base has fully cooked, add it to the pot.

  4. When the potatoes have softened, turn off the element. Add the celery and cherry tomatoes, cover the pot, and let them steam cook for 5-10 minutes.

And there you go! You have a beautiful, beneficial coastal stew to nourish the whole family.

Adjustment suggestion: If you want to cook this nourishing soup but are on a keto diet plan, swap the potatoes for cauliflower or broccoli stems. They will have a similar texture to potatoes but with higher fiber and lower total carbohydrates.
