5 Ingredient Superfood Jam

Ah, the blueberry season is in full swing! And with an abundance of these antioxidant-rich berries growing in my backyard, it's time to play around with some simple recipes. Let's face it, nobody wants to cook in this summer heat, but they do want to add some seasonal flavors to their meals. Since I'm not the best with fancy-pants recipes and don't want to waste those precious berries, I will start with a jam.

So let's cut down your time in the hot kitchen so you can enjoy this beautiful weather!


Cook time: 10 minutes Cool down time: 1 hour Makes: 1 cup (8 servings)

Ingredients:

1 cup of blueberries

1 tbsp Lemon Juice

1 tbsp Baobab powder

1 tbsp Lakanto Sweetener

1/2 tbsp Organika Bovine Gelatin


Instructions

  1. In a small saucepan, turn on the burner to medium heat. Combine lemon juice, baobab powder, and sweetener with a whisk.

  2. Once blended, add the blueberries and mash them with the whisk to desired consistency.

  3. Add the bovine gelatin powder, mix it for a few minutes, then turn off the burner.

  4. Transfer the blueberry jam into a container, and allow it to cool for an hour. Or add it to your desired dessert!

The Nutrition Facts Per Serving (2 tbsp):

Calories: 22.5

Net Carbohydrates: 3.74 g (Fiber: 1.26 g)

Protein: 0.78 g

Fat: 0.78 g


Baobab Health Fact: Not only does baobab powder help with thickening the jam due to its fiber content, but it also has a high amount of naturally occurring vitamin C, magnesium, and B vitamins.


To Note: Best consumed in 1-2 weeks since this is a preservative-free recipe.

Simple Fudgey Brownies

Ingredients:

1/2 cup cocoa powder

1 cup Bob's Red Mill Hazelnut flour

1/2 tsp baking powder

1/4 tsp Himalaya salt

1/2 cup melted butter (plus extra to grease pan)

Two large eggs

1 tsp vanilla extract

1/4 cup Lakanto Monkfruit sweetener


Instructions:

1. Preheat the oven to 350 F and coat the sides of a loaf pan with coconut oil or butter.

2. Combine dry ingredients in a medium-sized bowl: cocoa powder, Bob's Red Mill Hazelnut flour, baking powder, and Himalaya salt.

3. In a separate bowl: combine melted butter, eggs, vanilla extract, and Lakanto Monkfruit sweetener.

4. Add the wet ingredients into the dry ingredients bowl and blend till smooth.

5. Place in the oven for 12-15 minutes.

6. Once fully cooked, remove from oven, set aside to cool, and cut into six pieces.


Makes: 6 servings

Protein: 2.1 g

Fat: 31.8 g


Hot tip, pop them in the microwave for 15-20 seconds to make them nice and gooey.
