Chocolate Peanut Butter Bliss

Hi everyone, so we are almost a month into 2021, and I am sure you are keeping on with your New Years' resolution! Whether it be making simple health changes, becoming more active, or setting small personal goals, I know that I have set some goals for myself and continuing with them. I wrote about my own on my last blog post, so if you need some inspiration, have a look. If you are thinking of trying to set some healthy goals, it is not too late! (if you slip up, pick up and keep going)


For those of you trying to kick the candy and sugar, I have a simple sweet treat for you to keep handy when you have a little craving. It is quite versatile, and for those of you with kids at home, you can get them involved too! The recipe yields a lot of treats, so feel free to share them with family and friends. I am sure they will be appreciative of it, especially during these rather strange times.

Ingredients:

500 ml jar of Organic Crunchy Peanut Butter

Two packets of 250gr sized Dark Chocolate Chips

2-3 cups of Icing Sugar


Directions

  1. In a medium-sized bowl, combine peanut butter and gradually add in the icing sugar until it soaks up the oil, and the mixture is no longer sticking to the edge of the bowl.

  2. On two parchment-lined baking trays, ball up the peanut butter mixture into 1 inch sized balls and place in the trays until all the batter is complete.

  3. Place baking trays into the freezer for at least one hour.

  4. Put a small saucepan with a small amount of water on a stovetop on medium heat.

  5. Place either a pyrex or metal bowl on top of the saucepan and add in the chocolate chips. Stir until all the chocolate chips have melted, then bring the temperature down to low.

  6. After an hour in the freezer, remove a baking tray one at a time and with two spoons, cover the peanut butter balls in the melted chocolate and return to the baking tray.

  7. Once they are all covered, return the baking trays to the freezer. When the chocolate has solidified (about a few hours), you will have a delicious treat waiting for you!

And there you go, a perfect sweet treat for all your binge-watching, movie nights, or game nights with family and friends! I enjoy it with a bit of chai tea (seen in the picture above), and a funny movie.
