Chocolate Super Pudding
Alright, everyone, we got yet another chocolate pudding creation! As you can suspect, it is a bit of a craving of mine. And since I’m on a path to regaining a healthy diet and lifestyle since my covid craving spiral, I am on an ongoing quest to make delicious alternatives to sugary treats.
Since collagen is a hot trend with so many benefits, I thought, why not chuck in this brand new marine collagen from Natural Factors and see how it goes! As many of you already know, collagen is a fantastic supplement that is a building block to support skin elasticity, hair and nail growth, and a supportive joint anti-inflammatory. What many don’t know is that it contains a wide range of amino acids which maintain hormone production. Hydroxyproline and tyrosine, in particular, can aid in thyroid hormone production to assist in our natural sleep/wake cycle. Having it in the evening calming beverage, or treat, will provide a good amount of protein and building blocks to allow for a restful sleep to help recover and prepare for the next day!
And you guessed it, in addition to the collagen, I have added two Organic Traditions powders: Apple Pectin powder and Macaccino mix. Apple pectin is not only a vegan thickener alternative, but it also contains soluble fiber, which helps you feel fuller for longer and aids in colon health by providing nutrients to your unique probiotic colony. Their beautifully created Macaccino Drink Mix is only four ingredients (Maca, cocoa, vanilla bean, and coconut sugar) and gives a nice dark chocolate flavor with the added benefits of the superfood Maca. As a Peruvian herb, it is well known for its fertility-boosting properties. It contains essential fatty acids, minerals, and B vitamins, which impact hormone creation and conversion. For those seeking to balance their hormones, reduce stress, and build lean muscle mass, this will surely be something to take regularly.
Now that we know the purposes for these intended ingredients, here is the simply delicious pudding recipe!
3/4- 1 teaspoon apple pectin powder
1 cup coconut milk
2 tbsp Organic Traditions Macaccino mix
Two scoops of Natural Factors Total Marine Collagen (2.9 grams)
Combine all ingredients into a medium saucepan.
Put on medium heat until mixture starts to boil.
Boil for approximately 1-2 minutes to allow it to thicken. If it’s still too thin, add more apple pectin powder in quarter teaspoon doses until the ideal thickness.
Put the stovetop on low heat to allow it to simmer for a few minutes.
Taste test to see if it appeals to your taste buds. Too dark? Add some sweetener. A few of my favorites are coconut sugar, maple syrup, or honey.
Remove from the element and stand to cool. It can be refrigerated to speed up the process.
Serve and dress with some additional berries or nuts if desired.
