Eat the Cupboard: Pear and Cashew Breakfast Bars
On these gloomy days, all I think about is gobbling up pastries and watching new films that I haven't gotten around to. But, as I try to stay on the health train, probably not the best idea to go to the bakery and munch on a box of doughnuts! So here comes another day of creating a delicious and guilt-free breakfast bar.
Okay, so this isn't strictly for breakfast. It's perfect for a tasty snack on the go, paired with an afternoon tea or a post-dinner treat. All I'm saying is that it's low in sugar, high in protein, and a perfect get-up-and-go bar to take with you on the road. Plus, it has a soft and light texture that won't break your jaw in the early morning!
Pear and Cashew Breakfast Bars
Time: 35 minutes Servings: 9 bars Cost per Serving: $1.81*
1/2 cup of Bob's Super Fine Almond Flour
1/2 cup of Botanica Perfect Protein Vanilla
1/2 cup of rolled oats
1/4 cup of unsalted butter, melted
Two tablespoons of maple syrup
Two eggs, room temperature
1/2 cup of salted cashews pieces
One pear, diced
1/2 teaspoon ground cinnamon
Preheat oven to 350 F.
Combine almond flour, Botanica Perfect Protein, and rolled oats in a medium bowl. While mixing, remember to break up the almond flour clumps.
Whisk melted butter, maple syrup, and eggs in a measuring cup.
Add the measuring cup mixture to the dry ingredients and blend.
Line a 21 cm x21 cm x5 cm baking dish with parchment paper. Pour the mixture into the baking dish and spread it evenly.
Top it with the diced pears and cashew pieces, and firmly press into the batter. Sprinkle cinnamon on top.
Place in the oven for 25-30 minutes.
Once fully baked, allow it to cool. Then cut into 9 bars, and enjoy!
