Eat the Cupboard: Pear and Cashew Breakfast Bars

On these gloomy days, all I think about is gobbling up pastries and watching new films that I haven't gotten around to. But, as I try to stay on the health train, probably not the best idea to go to the bakery and munch on a box of doughnuts! So here comes another day of creating a delicious and guilt-free breakfast bar.

Okay, so this isn't strictly for breakfast. It's perfect for a tasty snack on the go, paired with an afternoon tea or a post-dinner treat. All I'm saying is that it's low in sugar, high in protein, and a perfect get-up-and-go bar to take with you on the road. Plus, it has a soft and light texture that won't break your jaw in the early morning!

Pear and Cashew Breakfast Bars

Time: 35 minutes Servings: 9 bars Cost per Serving: $1.81*

Ingredients:

1/2 cup of Bob's Super Fine Almond Flour

1/2 cup of Botanica Perfect Protein Vanilla

1/2 cup of rolled oats

1/4 cup of unsalted butter, melted

Two tablespoons of maple syrup

Two eggs, room temperature

1/2 cup of salted cashews pieces

One pear, diced

1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat oven to 350 F.

  2. Combine almond flour, Botanica Perfect Protein, and rolled oats in a medium bowl. While mixing, remember to break up the almond flour clumps.

  3. Whisk melted butter, maple syrup, and eggs in a measuring cup.

  4. Add the measuring cup mixture to the dry ingredients and blend.

  5. Line a 21 cm x21 cm x5 cm baking dish with parchment paper. Pour the mixture into the baking dish and spread it evenly.

  6. Top it with the diced pears and cashew pieces, and firmly press into the batter. Sprinkle cinnamon on top.

  7. Place in the oven for 25-30 minutes.

  8. Once fully baked, allow it to cool. Then cut into 9 bars, and enjoy!

And there you go, a delicious treat for everyone in the family!

From the Cupboard: Rolled oats, Bob's Almond Flour, Botanica perfect protein, cashews, and cinnamon.

From the Fridge: Unsalted butter, maple syrup, and eggs.

A bit about Botanica Perfect Protein:

Botanica is a beautiful Canadian company that produces herbal and functional foods to help enhance everyone's health. What is particularly fantastic about Botanica's Perfect Protein is that it is a simple plant-based protein powder that contains only three sources of organic protein, which are gluten-free, dairy-free, and soy free.

The best thing about this protein powder is that it's stevia free! If you are sick and tired of all those protein powders filled with stevia, then you must try this out. The only sweetener in this tub is monk fruit, a beautiful sugar alternative with blood sugar benefits.

So if you are looking for a healthy source of protein that is easy to mix and drink, this may be the one for you!

How do you make your treats healthy? What's your favorite grab-and-go snack to take with you?

Until next time, stay well!

Chloe
